Feed the kids this 2 ingredient,2 minute watermelon popsicle and feel good knowing that they are getting a full serving of fruit! It literally takes only two minutes to put the ingredients in a blender and mix everything and freeze.
Last week I had some friends drop off a couple of large watermelons, they kept sitting in the pantry as we were having some work done in the kitchen. A week later, they were still sitting in my pantry and I knew that I would have to use them up pretty quickly.
I used up half the watermelon to make an Indian inspired juice-Watermelon Pana, its such a refreshing drink with mint, ginger, salt and sugar. It turned out to be delicious! I still had half a watermelon, so I decided on the Sorbet/popsicles. I took some over to my friends place in the afternoon and everyone thoroughly enjoyed the cool, refreshing dessert.
Summers call for simple dishes that make full use of summers bounty-try Blueberry Crumble, Strawberry Kiwi Salsa and Thai Veg Curry with Tofu/Paneer. So when kids ask for icecream and you want them to have something healthy, make these simple fruity popsicles and feel good knowing they are eating a full serving of fruit.
