A quick easy recipe of papdi chaat using air fried tater tots and air fried papdi. When craving for chaat strikes and you don’t want to boil, peel and dice the potatoes then its tater tpts to the rescue. I had earlier shared a recipe for making papri by air frying ready tortillas. They turn out crisp, crunchy and need only a spoonful of oil. Huge calorie saving compared to the deep fried version. I learnt this hack about using tortillas as papdi, when I first came to the Us about 25 years back. The hack worked but as I became more calorie conscious, I found myself making it less often. Fast forward to the days of air fryer and the air fried papdi works just as well as the deep fried ones.
This papdi chaat recipe is an easy recipe to put together for a party. Just keep all the ingredients ready and layer and assemble it when your guests arrive. Make a large batch in a 9*13 pan and it should be enough to serve 6-8 people. This recipe is very flexible and you can customize it to the ingredients that you like. You can completely skip the papdi and just use tater tots to make aloo tikki chaat. Or completely skip the yogurt and keep it vegan by just using Green chutney and tamarind chutney.
Some variations are to use black chick peas, sprouted moong, sprouted black chick peas, crushed dahi vadas , boondi and bhel mix. Here is my hack for tamarind chutney– its Tamarind chutney without tamarind! I use Apple butter as a base and add lemon juice, sugar and spices to make the most amazing sweet chutney, Its a no cook recipe, lasts a really long time in the fridge and its actually good for you as you are consuming a serving of fruit!

Tater Tots Papdi Chaat-Air Fryer Recipe
Equipment

1 Air fryer
-
1 rectangular dish for assembling chaat
Ingredients
- 20-25 tater tots
- 15-20 papdi I used air fried tortillas cut into diamond shapes
- 15 oz boiled chick peas, drained I used 425 gms canned chick peas
- 1.5 cup Thick yogurt, whisked
- 1 tsp sugar
- 1 tsp salt
- 4-8 tbsp Green coriander mint chutney
- 4-8 tbsp sweet tamarind chutney I use my Apple Butter hack to make this chutney
- 1/2 tsp Red chili powder optional
- 1/2 tsp chat masala optional
Toppings
- 2 tbsp cilantro chopped
- 2 tbsp pomegranate arils
- 4 tbsp sev/bhujia nylon sev preferred
Instructions

Preheat Airfryer at 360F /180C

Arrange tater tots in a single layer, brush with oil or spray(optional) and air fry for 5 minutes. Turn them over and bake again for an additional 5 minutes or till crisp and golden

Whisk yogurt with salt, sugar and some water to make thick pouring consistency, set aside. The amount of water used depends on the thickness of yogurt.

In rectangular dish, spread a layer of boiled chickpeas

Sprinkle some red chili powder and chat masala on the chickpeas,optional

Spread the air fried tater tots on top of the chick peas

Spread the papri/papdi(I use air fried tortillas cut into diamond shape, link shared below)

Drizzle the whisked yogurt on top of the papri

Drizzle some green chutney and tamarind chutney on top of the yogurt

Top with sev, cilantro and pomegranate seeds and serve immediately
Notes
Here is the step by step pictorial recipe-
Make Green chutney with cilantro(freezing instructions included)
Cut up tortillas and air fry them to make papri or use store bought papdi
Whisk yogurt with salt, sugar and water and set aside
Preheat air fryer to 360F/180C
Arrange tater tots in a single layer and air fry for 5 minutes
Flip and air fry again for 5 more minutes or till crisp and golden(brushing/spraying oil is optional)
In rectangular pan, arrange as follow-boiled chick peas, tater tots, papdi, yogurt
Green chutney, tamarind chutney ,sev, cilantro and pomegranate seeds
Serve immediately
