Sprouted Moong Salad/Chat

 

A healthy,zero fat and high protein salad which combines the health benefits of vegetables with the goodness of sprouted Green moong/mung beans. Green Moong/mung beans is a  power house of nutrition and when sprouted its nutritional benefits double. I had earlier shared how to sprout Green Moong/mung beans without a sprout maker or going through the old fashioned way of sprouting by tying the beans in a wet muslin cloth. This easy and hygienic method makes it easy to include sprouted moong/mung beans in our diet.

If you absolutely don’t like raw sprouts, then cook it lightly, like I do occasionally, with some Indian spices. Here I heated some oil, put cumin seeds, coriander powder, turmeric, red chili powder and salt with very little water and cooked it just enough to keep it firm but not mushy. I personally like my sprouts like this, topped with vegetables and chatnis!

Sprouted Green Moong mixed with fresh chopped vegetables makes a healthy,high protein meal. Perfect for breakfast,lunch, dinner or as a healthy appetizer.

Ingredients

  

  • 2 cups sprouted Green Moong/Mung Beans
  • 2 cups chopped mixed vegetables-Cucumber,tomato,colored peppers,onion,carrots,cilantro
  • 1/4 inch ginger finely chopped(optional)
  • 1-2 Green chilies finely chopped(optional)
  • Juice of 1/2 to 1 lemon depending on size
  • salt and pepper as per taste
  • Chat Masala optional
  • Red Chili Powder optional

Instructions

 

  • Mix the sprouts with the mixed vegetables,ginger and green chilies
  • Add lemon juice.
  • Add salt,pepper,chatmasala,red chili powder just before serving.
  • Enjoy for breakfast,lunch or dinner.

Notes

Use any vegetables like cabbage,cauliflower,corn,mushroom.You can use cooked sprouts for a variation. Add bhel mix,sweet Tamarind chatni, Green chatni,Sev or just ketchup for variety.
