A colorful,healthy sandwich which tastes great by itself or served along side a bowl of soup.Full of spinach,colored peppers and onions its a very nutritious sandwich. The pesto,cheese and jalapenos provide a very unique flavor to the sandwich.
This is usually my go to sandwich when I have friends over for lunch. I have made it with and without pesto and either way it turns out great. I usually serve this with Black Bean Soup or Tomato Soup and add either Asian Salad or Couscous salad to make a very filling and satisfying meal.
Its very versatile, make it with whatever bread is available, though a heartier bread turns crisper! You have the option to use whatever vegetables are on hand. For me, Colored peppers, spinach and onions are always available and thats what I use most of the time.
I have also made it with cucumbers, tomatoes, lettuce and onions and not grilled it and it turns out like a Subway style sandwich! Play around with flavors,ingredients and breads and each time you will have a different style of sandwich. Green Chatni instead of Pesto also tastes great. Some other sandwiches to try out are- Paneer Pesto Corn Sandwich and Portobello Mushroom Sandwich/Burger.
Moving on to the recipe, here is the written recipe followed by the step by step pictorial one-
Spinach Veggie Pesto Sandwich on Ciabatta Bread
Ingredients
- 8 slices of Bread or 4 Ciabatta rolls cut up
- 1 cup mixed chopped veggies I used colored pepper,onions and Cilantro/coriander/dhaniya
- Baby Spinach leaves or chopped spinach
- Pesto-3-4 tsp optional can replace with Green chatni for a vegan option
- 4 slices Pepperjack cheese or any kind of sliced cheese can skip or use vegan cheese for vegan option
- Jalapeno peppers pickled(optional)
Instructions

Heat Grill or pan
-
Apply Butter/Ghee/oil on outside of both slices of bread, so it gets to crisp nicely

One one side of Bread,layer as follows-Pesto,cheese,jalapeno peppers,thick layer of spinach and cut up veggies.

Sprinkle salt and pepper, just before you are ready to grill.

On the other side of bread apply Mayo or butter
-
Place sandwich on hot grill/panini maker and cook till crisp and golden.
Notes
You can use any kind of hearty bread, I have tried it with Soudough, Multigrain,Ciabatta,Italian and Whole Wheat and they all taste great.
If you are grilling/cooking on pan then cucumbers,tomatoes and lettuce are not good options as they tend to get watery. if you are not grilling/cooking on pan the you can use Cucumbers,tomatoes and lettuce.

Chop/dice all veggies of your choice(I used colored peppers, onions and Cilantro/Coriander)
Ingredients
Apply Butter/Ghee on the outside of the bread to crisp and brown the bread
Apply pesto or Green Chatni
Top with a slice of cheese
Top with pickled jalapeno slices(optional)
Top with a thick layer of spinach(It will wilt upon grilling)
Top with chopped/diced veggies and sprinkle with salt and pepper just before grilling
Place buttered side down on Grill or pan
Top with another slice, buttered side up

I made it today with cutting loaf of artisan bread. It came out great but the bread size is smaller than cheese slice size. What brand of ciabatta bread u buy and from which store? I am US based.

Hi Dharmishtha, thanks for sharing your feedback. Glad to hear that the sandwiches turned out great. I buy the ciabatta bread from Sams or Walmart. Even Publix sells Ciabatta bread. Look in the bakery section, where they have fresh baked goods, not the bread aisle.
