This eggless,butter less and dairy free cake spiced delicately with Pumpkin Pie Spice and topped with a delicious,simple streusel topping is one of the moistest cakes you will eat. One of the easiest cakes to makes with ingredients found in every home. No special trips to the store and not even any special equipment required. All you need is a bowl and a spoon!
The cake rises beautifully to make a very light,airy and moist cake. I had made Vegan Chocolate Cupcakes for my 1st blog anniversary. I loved the way they turned out and I just tweaked the recipe and added Pumpkin Pie Spice to make this No Egg, No Milk, No Butter Spiced cake. For those not familiar with Pumpkin Pie Spice, feel free to use Chai/tea masala mixed with some cinnamon or just use any spice of your choice. I wanted to make a coffeecake so topped it with a real easy streusel. Tastes so good with a cup of coffee! Some of my other eggless desserts are Eggless Red velvet cupcakes, Mango Mousse without Agar Agar, Instant Apple Crisp and Blueberry Crumble.
It’s a perfect recipe for Halloween,Thanksgiving and even Christmas. It’s a great recipe for someone who is just foraying into baking and looking for a no fail recipe. Also a great way to involve kids. Can be made into cupcakes, just reduce baking time to 18-20 minutes. Can be made without the streusel and enjoyed plain or can be topped with Buttercream Icing or Cream cheese icing.

Here is the written recipe followed by the step by step pictorial one-
Spiced Cake with Streusel Topping-No Eggs,No Butter,No Condensed Milk(Vegan)
Ingredients
- 1 1/2 cups plus 2 tbsp All Purpose Flour/Maida
- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp Pumpkin Pie Spice ground cinnamon,ginger,cloves,nutmeg and allspice
- 1 cup warm water may need 1-2 tbsp more to make the batter thin and runny
- 6 tbsp oil
- 1 tbsp vanilla extract
- 1 tbsp white vinegar
For Streusel
- 1/4 cup All purpose flour
- 1/8 cup Brown sugar
- 1/8 cup old fashioned oats or Quick oats not the instant one
- pinch of salt
- 2 tbsp butter at room temperature,firm(use coconut oil for vegan option)
- 1/4 tsp pumpkin pie spice ground cinnamon,ginger,cloves,nutmeg and allspice
Instructions
For Streusel

Mix flour,sugar,oats,salt and pumpkin spice mix

Work in the butter(coconut oil for vegan) using two knives or forks till it becomes crumbly,set aside
for cake

Grease and dust a loaf pan or an 8 inch pan and preheat the oven to 350 F/180 C

Mix flour,sugar,baking soda,salt and pumpkin pie spice and pass all the ingredients through a sieve

To the dry ingredients add,oil, vanilla extract,water and vinegar in the end

Add 1-2 tbsp of water,only if needed, to make a thin batter(I did use about 1 1/2 tbsp)

Pour batter into prepared pan and top with streusel

Bake in the center rack for 30-35 minutes, till a toothpick inserted in the center of the cake comes out clean

Cool and invert onto a plate, Cool completely before cutting
Notes
I have used a standard American Measuring cup. Never fill a cup by scooping, instead use a spoon to fill the cup and then level it off.

For Streusel,Mix the dry ingredients and add to the butter
Using knives, cut the butter into the dry ingredients, till crumbly,set aside
For Cake,Sieve all the dry ingredients,flour,sugar,baking soda,spice mix and salt
Add the wet ingredient,oil,water,vanilla extract adding white vinegar in the end
Pour into a greased and floured pan
Top with the streusel and bake
Cool completely on a wire rack and slice
