Shyam Savera Puris

A two colored puri which is not only healthy due to the addition of spinach into the dough, but is a conversation starter because each side of the puri is a different color!

I first ate this puri 28 years back when I was invited as a newly wed to dinner at my husbands Uncles home. When the freshly fried, two toned puffy puris came to the dining table, they were an ice breaker as it gave us something to talk about  and of course I got the recipe from  my aunt.

We moved to the US soon after and never made these Shyam Savera puris, but the recipe and the memory stayed with me and recently I decided to try it out. I used the same ingredients that I had used for Palak ki Puri and Tirangi puri and they were crisp and perfectly puffed up!  I credit my mom and mother in law for teaching me the technique to making Perfect Puffy Puri, right from the pliability of the dough, to temperature of oil, to know exactly when to turn the puri and how to press them.Other favorites of my family are Instant Bedmi Puri and Beet ki Puris.

These puris pair really well with Gobi Matar, Bean Aloo, Rasa Aloo,  Chana and Moong dal ki pakoris.

Spinach dough on one side and yellow dough on the other makes an attractive,two tone puri and the addition of spinach makes it healthy as well.

Ingredients

  

For Spinach/Green/Shyam dough-

  • 3-4 cups chopped spinach
  • 1/2 to 1 inch piece ginger
  • 1-3 green chilies
  • salt as per taste
  • 1/4 cup water or as needed to grind,don’t add too much
  • 2 cups Atta/whole wheat
  • Water as needed for binding dough

For Yellow dough-

  • 2 cups Atta/whole wheat flour
  • 1/2 tsp turmeric
  • salt as needed
  • water for binding dough

Instructions

 

For Spinach/Green dough-

  • Puree Spinach,salt,ginger and Green chilies.
  • Mix with Atta/whole wheat and make into a tight yet pliable dough.
  • Cover and leave aside for minimum 30 minutes.

For Yellow/Savera dough

  • Make a tight yet pliable dough with Atta,haldi,salt and water and leave aside for 20-30 minutes.
  • Make equal size balls of Green/Shyam and Yellow/Savera dough.
  • Place one on top of the other and press gently.
  • Roll it out into a disc shape and fry till done and crisp on both sides.

Notes

Make smaller than normal balls of the two types of dough,keeping in mind that they will combine to make ONE puri.

Ingredients for Spinach/Shyam and Yellow/Savera dough

Knead into tight yet pliable dough and keep aside

Make equal size balls of both the dough

Place the two dough on top of each other and press lightly with palm

Roll into thin discs

Fry in hot oil till puffy and crisp on both sides

Serve with Chana or Rasa Aloo and Dahi Vadas
