Air Fried Roasted Red Pepper Hummus

Roasted Red peppers and roasted garlic provides tonnes of flavor and color to this easy hummus recipe. The Red peppers and garlic are roasted in an Air Fryer, making it so much easier than charring on a grill or oven. I have included the method for roasting in an oven, stovetop and grill.

I have used store bought Tahini. But if you don’t have tahini handy at home, here is a very easy and quick recipe of tahini to make it at home. It requires only 3 ingredients and comes together very quickly.

Recipe for Tahini– use 1 cup while hulled sesame seeds, 4 tbsp of any unflavored oil and pinch of salt. Toast the sesame seeds till light colored and fragrant. Add sesame seeds and salt in a food processor and blend till a crumbly paste forms. Add oil and blend till  smooth and pourable. Start with 2 tbsp oil and add an additional tbsp of oil and keep blending. Makes approximately 1/2 cup of tahini. Recipe adapted from Inspired taste.

To Roast Red peppers and garlic cloves in the oven-

If you don’t have an air fryer you can still roast the Red peppers and garlic in the oven.Turn the oven to broil. Put oil and place peppers cut side down on a baking tray and broil at the top most rack,closest to the heating element. You will have to keep checking as broil function usually is at 500F or higher. Keep oven door open and keep changing the direction of the baking tray to ensure even charring.

To Roast Red peppers and garlic cloves on gas/stovetop-

Cut peppers into quarters instead of halves. Place a wire mesh directly on the gas/stove. Place the oiled red peppers, cut side facing up and char directly on the gas/stove. Use tongs to move the peppers around on the wire mesh to make sure they char evenly.

To Roast Red peppers and garlic cloves on the grill-

Cut peppers in half and oil. Place a wire mesh on the grill(as the grill grates are sometimes widely spaced and the garlic will slide on to the coal). Place the oiled red peppers, cut side facing up and char directly on the gas/stove. Use tongs to move the peppers around on the wire mesh to make sure they char evenly.

Cook Time 11 minutes
Total Time 16 minutes

Servings 2 cups

Ingredients

  

  • 2 Large Red Bell Peppers washed and cut in half(Can use a jar of Roasted Red Peppers)
  • 11-12 large cloves of garlic
  • 1 and 1/2 cups boiled chickpeas/chana/garbanzo beans 1 15 oz/425 gms can of chick peas
  • 3 tbsp Tahini
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 tsp Red chili powder reduce or omit for milder hummus
  • 1/2 tsp salt or as needed keep in mind, canned chick peas have salt
  • 1 tbsp water if needed for blending

Instructions

 

  • Preheat Air Fryer at 370 F for 5 minutes
  • Remove stems and deseed the peppers
  • Apply oil on the garlic and outer side of peppers and lay flat in air fryer basket and air fry at 400F for 7 minutes
  • Move the peppers and garlic around for even browning and air fry at 400F for 4 minutes(do not flip the peppers)all together 11 minutes
  • Remove the peppers and place in a bowl and cover with plastic wrap or plate and set aside for 15 minutes
  • Remove wrap, by now the peppers are cold enough to handle and the thin charred skin on top comes off easily
  • Cut peppers into strips
  • In blender, add chick peas,tahini,salt, olive oil and lemon juice and blend till smooth
  • Add Red chili powder,roasted garlic and slices of roasted,skinned red peppers and blend till smooth
  • Serve with pita chips and cut veggies

Notes

I have used canned chick peas, but you can soak 1/2 cup chickpeas/chana overnight and cook with some salt. Drain chickpeas when done. The Red chili powder adds a bit of heat and color. If you just want color and no heat, use paprika/kashmiri lal mirch. Roasting the garlic cloves along with the red peppers gives a good nutty,garlicky flavor to the hummus.

Ingredients

Cut peppers in half and remove seeds and stalk

Rub/spray oil or on the peppers and garlic

Place in an air fryer and roast till the upper layer chars

Place in a bowl and cover with wrap or plate and set aside

After 15 minutes, remove the thin charred skin and cut/chop the peppers

Add chick peas/chana, tahini,lemon juice,salt and olive oil and blend till smooth

Add Red chili powder,roasted garlic and roasted peppers and blend till smooth

Enjoy with pita chips,cut veggies,falafels
