Red lentil bread or Masoor Dal Bread is high protein and has NO yeast, flour, soy, eggs or nuts. This vegan and Gluten free bread has 8 grams of protein and 5 grams of fiber per dinner roll! With a whopping amount of protein and fiber, the masoor dal bread keeps you full and satiated for hours and aids in your weight loss journey.
The red lentil bread requires no yeast or kneading or any grains and though its texture is dense, it gives the satisfaction of having bread. I have been avoiding bread for so long now that it felt good to make a healthy sandwich out of this red lentil bread and enjoy it guilt free. It kept me full for hours!
What is Red Lentil? Red Lentils, also called Masoor Dal are part of the legume family and widely used in the Indian subcontinent. They are more orange than red and come from the whole Brown Lentils(Sabut Masur in India). The red lentils are split in half and have their skins removed. Red lentils are easily digested, quick to cook, turn soft and creamy upon cooking, making it an ideal base for soups. Red lentils give a slight brownish color to the bread making it seem more like whole wheat bread.
Can I use any other lentil besides Red Lentil? Yellow Moong dal would work as well as they both have similar textures and cooking times.
What is psyllium Husk? Psyllium comes from the Plantago Ovata plant grown in the western states of Gujarat and Rajasthan in India. Ancient traditional medicine-Ayurveda has long used Psyllium husk for maintaining digestive health. Psyllium husk loves water and when mixed with water forms a gel. This ability to absorb water and form a gel like consistency is what makes psyllium husk an ideal candidate for gluten free baking. It binds the dough and gives it elasticity to knead and shape the dough.
Whole psyllium husk versus powder? Powdered psyllium husk is simply whole psyllium husk that has been finely powdered. In India it is generally sold in powdered form by the brand name Isabgol and readily available at all Indian grocery stores. I bought Whole Psyllium husk at Walmart. If using the powdered psyllium husk, measure 1/4 cup and then remove 1 tsp from it as we need a little less of the powdered form.
Vinegar or lemon juice? You can use white vinegar, apple cider vinegar or lemon juice, they should all work. I use white vinegar for all my egg free bakes. Basically we need something acidic to react with the baking soda and use that reaction to create some air in our cakes and breads.
Its important to put the soda and vinegar in the end and to put the vinegar on top of the baking soda. Work fast as soon as you mix the baking soda and vinegar to the lentil dough.
What oil to use? Olive oil, Avocado, canola, Peanut or Sunflower oil should all work
Can we toast the Red lentil Bread? Yes, I have put the no yeast red lentil sliced bread in a toaster at the highest setting and even crisped it on a pan with some butter.
How to store? Store bread in a ziploc bag or air tight container in the fridge for upto a week.

Moving onto the recipe, here is the written recipe followed by the step by step pictorial one-
Red lentil Bread/Masoor Dal Bread-No Yeast V&GF
Equipment

1 bowl
-
1 colander/sieve
-
1 blender or food processor
-
1 baking tray
-
1 parchment paper
-
1 Air fryer
-
1 measuring cups and spoons
Ingredients
- 1 cup Red lentils/Masoor Dal 200 gms
- 1/4 cup Whole Psyllium Husk/ Isabgol 20 gms
- 1/4 cup water 60 ml
- 1.5 tbsp olive oil 22 ml
- 3/4 tsp salt
- 1/2 tsp baking soda
- 2 tsp vinegar/lemon juice/apple cider vinegar
Topping
- 2 tbsp Everything but the bagel seasoning or sesame and pumpkin seeds
Instructions

Rinse lentils in water-till water runs clear, about 6-7 times

Pour 3-4 cups water over the lentils, cover and leave overnight to soak

Drain the soaked lentils in colander, making sure all the water is strained
-
Preheat oven to 350F/180C. Line a baking sheet with parchment paper. Air Fryer instructions below

In Blender, add soaked lentil, whole psyllium husk, oil, water and salt and blend till smooth and the lentils are completely crushed

Transfer the lentil dough to a bowl. Put baking soda. Pour the vinegar or lemon juice on top of the baking soda so the two react and bubble. Immediately start processing the dough.

Mix well till the soda and vinegar have blended in well the lentil dough

Don't let the dough rest, immediately shape bread rolls by hand. Wet your hands for easy handling. Roll one side of the bread rolls on seeds of choice and place on parchment paper lined baking tray. For small rolls, divide into 6 equal portions, otherwise divide into four.

Bake for 25 minutes. Remove from oven and put on a wire rack to cool for atleast 15 minutes before slicing.
Air Fryer instructions

Preheat air fryer at 370F/188C for 7-8 minutes

Brush the air fryer basket with oil and place 6 bread rolls in the basket

Air fry at 370F/188C for 7 minutes. Brush some oil on top of the bread rolls and continue to air fry for an additional 7 minutes. Total 14 minutes. Applying oil is optional.

Remove from air fryer, cool for 15 minutes before slicing

Slice and top with your favorite spread and toppings
I mix Greek yogurt with sriracha and then top with some crunchy vegetables
