Portobello Mushroom Sandwich/Burger

Yummy,healthy veg sandwich in which the large Portobello Mushroom takes the place of a patty. The simple marinade of Balsamic vinegar and garlic and onion powder gives a very clean,fresh flavor to the mushroom without overpowering it with too many flavors.

 

Its perfect for vegetarians and vegans alike, vegans can simply eliminate the cheese. I make this very often when our family does the whole30 detox. Of course, we dont eat it as a sandwich on the whole30 plan. I cook the marinated mushroom and place it between lettuce leaves.

Portobello Mushroom Sandwich/Burger

Ingredients

  

  • 4-5 Portobello Mushroom
  • 1 tbsp Olive oil
  • 2 tbsp Balsamic Vinegar
  • 1/2 tsp Garlic powder or 1 tbsp garlic paste
  • 1/2 tsp Onion Powder optional
  • Salt and pepper as per taste
  • Red Chili powder/Lal mirch powder optional, if you want a spicy sandwich
  • 4-5 Ciabatta Bread
  • 4-5 slices Pepper Jack Cheese or any cheese
  • Lettuce Onions Tomatoes, sliced
  • Jalapenos optional
  • Butter
  • Mayonnaise optional
  • 1-2 tsp Olive oil

Instructions

 

  • Wash and clean Mushrooms under running water and rub gently with hands to clean. Remove the stems.
  • Let water drain from mushrooms.
  • Put Mushroom caps in a large flat dish,gill side up,smooth side down.
  • Pour oil,vinegar and sprinkle onion powder,garlic powder,salt and pepper on the mushroom.
  • Let mushroom marinate for a few hours to overnight.
  • Heat pan and drizzle 1-2 tsp oil.Add mushroom and cook both sides. It will leave a lot of water, cook till the water dries up.Keep aside.
  • Toast the bread on a pan with little butter. If using a grill, place on grill.
  • Put mayo on one side of the bread, top with cheese,Romaine or any lettuce,Onions, Tomatoes and mushroom patty. Top with another slice of Ciabatta bread.
  • Enjoy the tastiest Veg burger!

Notes

If you are vegan,just avoid the cheese and Mayo.If you are avoiding carbs, have the mushroom cap wrapped in lettuce leaves. Place a fried egg over it for a high protein, no carb breakfast and make it whole30 compatible.

 Ingredients for marinating mushrooms

Clean mushrooms, remove stems and marinate them

In a pan put some oil and cook mushrooms on both sides till the water dries up, if using grill, cook till done on both sides.

Apply a little butter and toast the bread on a pan or if using grill,place them on grill and cook till slightly crisp

Slice Onions, tomatoes,lettuce for topping.

Add Mayo(optional) on one side of bread and top with cheese,if vegan, skip the cheese.

Top with onions

Top with lettuce and tomatoes

Place the cooked Mushroom on top

Top with bread and enjoy!
