Pistachio Chocolate Eclair -No bake chocolate eclair dessert that comes together in 5 minutes. Using graham crackers for crust and instant pudding mixes and cool whip for the filling this is one easy dessert to make for a large crowd without much effort. The chocolate frosting on top completes the eclair dessert.
This Pistachio Chocolate Eclair recipe is ideal for parties and large gatherings, potlucks, Easter lunches, office parties, Christmas and thanksgiving as it can be made ahead and refrigerated and easily serves 18-20 people.
I got this recipe from a cookbook that used to be published by our local newspaper many years back. I have made it many times to rave reviews from family and friends. The eggfree Pistachio Chocolate Eclair dessert won the second prize in the dessert category and was submitted by Verna Looney.

Pistachio Chocolate Eclair Dessert-No Bake Recipe
Equipment

1 9*13 pan

1 bowl large
-
1 bowl small
-
1 whisk

1 spoon
Ingredients
- 3 cups cold milk I used 2%
- 1 3.4 oz package,Instant Pistachio Pudding Mix 96 gms
- 1 3.4 oz package,Instant French Vanilla Pudding Mix 96 gms
- 1 8 oz Frozen Whipped topping/Cool Whip 227 gms,thawed
- 1 14.4 oz package,Graham crackers 410 gms,I used Nabisco brand
- 1 16 oz can chocolate frosting I used Betty Crocker Hersheys Milk Chocolate 1 lb, 453 gms
Instructions
-
Thaw the carton of frozen whipped topping for 4 hours in the fridge or as per instructions on tub.

In a large bowl, whisk milk and pudding mixes for two minutes or until soft set

Fold in the whipped topping

In a 13*9*2 dish,spread a layer of graham crackers, break crackers if needed to fill in the spaces on the sides

Top the graham crackers with half of the pudding mixture

Put a layer of graham crackers on top of the pudding mixture, again breaking crackers if needed to fill in the spaces on the sides.

Put the remaining half of the pudding mixture on top of the graham cracker layer
-
Top with a third layer of graham crackers

Spoon chocolate frosting into a microwave safe bowl and microwave for 20 seconds, mix well

Spread the softened frosting over the graham crackers with the help of a spoon

Refrigerate overnight or at least for 2 hours till the layers set

Top with chopped pistachios,chocolate shavings, graham cracker crumbs

Ingredients
Thaw the whipped topping for 4 hours or as per instructions on the carton
In large bowl,whisk milk and pudding mixes for two minutes or until soft set
Fold in the whipped topping til pudding mix and cool whip blend in completely
Layer a third of the graham crackers and half of the pudding mixture
Repeat layers and top with graham crackers
Spoon frosting into microwave safe bowl and microwave for 20 seconds
Spread the softened frosting over the last layer of graham crackers
Refrigerate overnight or atleast 2 hours for layers and frosting to set
Top with graham crackers, chocolate pieces or shavings or chopped pistachios
