A healthy way to incorporate Greens into your diet is to grind it and mix with with atta/whole wheat flour and make parathas or puris out of it, which is a staple in most Indian homes.
Most kids love puris and parathas so why not sneak in some vegetables and make it healthy as well. The puris are so crisp and tasty that you would never guess that they are actually good for you!
I made Tirangi/Tricolor Puris with beet and spinach for color for the first time this Holi. They turned out so healthy and colorful!
Since then I have made just spinach/palak ki puris as well as Beet ki puris. Both turned out delicious.I also made Shyam Savera puris with spinach dough on one side and plain dough on the other!
Moving on to the recipe, here is the written recipe followed by step by step pictorial one-
Palak ki Puri/Paratha
Ingredients
- 3-4 cups chopped spinach
- 1/2 to 1 inch piece ginger
- 1-3 green chilies
- salt as per taste
- 1/4 cup water or as needed to grind,don’t add too much
- 2 cups Atta/whole wheat
- Water as needed for binding dough
Instructions

Puree Spinach,salt,ginger and Green chilies.

Mix with Atta/whole wheat and make into a tight yet pliable dough.

Cover and leave aside for minimum 30 minutes.

Heat oil and roll out dough into puris/discs

Fry till puffy and crisp on both sides.
