Nolen Gur Sandesh with Ricotta cheese-With Ricotta cheese as base for this Nolen Gur sandesh and a total of only 3 ingredients this is one of the easiest recipes of sandesh. No Chenna/paneer required. Just mix, cook, cool and shape into sandesh.
Winters in Kolkata are synonymous with desserts made from this seasonal delicacy. For those not familiar with this term-Nolen means new and Gur means jaggery. This gur is basically the sap from the Khajur/khejur trees or date palms. A slit is made in the stem of the trees and an earthern pot tied just below the slit to catch the sap/juice or Ros. The juice collects overnight and then next morning the juice is brought down, boiled and undergoes the process of being converted into gur/jaggery. Any delay in converting the sap into jaggery can lead to fermentation of the sap into alcohol. This fermented sap is sold as Toddy or Tari.
To make this winter specialty available all around the year, they started processing and preserving the otherwise liquid gur in solidified form as Patali Gur. That’s what I have used to make this Sandesh.

Nolen Gur Sandesh with Ricotta Cheese
Equipment

1 non stick pan
-
1 spatula
-
1 plate
Ingredients
- 1 15 oz/425 gms Ricotta Cheese tub-Full fat
- 1 cup Nolen Gur/Patali Gur-grated
- 1/2 cup milk powder
- 1 tbsp Ghee
Instructions
-
In a cold non stick pan put all the ingredients and mix well

Turn on the stove and cook on medium for 20 minutes till it leaves the sides of the pan

Remove pan from stove

Should be a little liquid, leave in pan to cool. Will thicken when it cools.

When cool enough to handle, put a dab of ghee in your hands and shape them into small discs/sandesh

Put a sprinkling of finely crushed pistachios as garnish

Cook on medium till water dries up and mix starts leaving sides of pan
Move pan from stove. let mixture cool in pan.
Once it cools and thickens(see last picture) shape into sandesh
Garnish with chopped pistachios

Hi Mona, this is an instant recipe. That’s why I am using Ricotta cheese. You can make it the traditional way by using paneer.

Love this recipe for many reasons other than the taste. Was easy to make with easily available ingredients like ricotta, milk powder, & light brown sugar ( in place of gur). I used 1/2 tspn elaichi powder for flavoring, have a mindset that a sweet has to have some kind of flavor. Sandesh turned out well! Will definitely try with date gur if I find it here.
