Moong Dal Toast-Vegan High Protein Breakfast

A high protein and healthy breakfast made with dal and bread, both readily available in every household. Taste is similar to Moong dal vada without the extra fat! Kids love it in their lunch boxes and it makes for great finger food for toddlers. This can be made with gluten free bread for a gluten free breakfast/appetizer.

The addition of the dal/lentil provides the protein that keeps us full for a long time. This Moong Dal toast is very versatile and can be made with any vegetables that you have at home-carrots,riced cauliflower,riced broccoli,finely chopped bell peppers and cabbage.I have also made these Dal Toasts with Green Moong dal and a combination of five different dals.

I make Mixed Dal Dosa and Green Moong Dal Dosa very often at home and make sure to always make extra batter. When I make the Mixed Dal Dosa batter, its dosas on day one, followed by Mixed Dal Idli the next day. Whatever batter is left over, I make Dal Appe or these Dal Toasts! So one batter and four different recipes! Each recipe is so different that you never feel you are eating leftovers the next day.

Moong Dal Toast

Taste is similar to Moong dal vada without the extra fat! This quick and easy breakfast will keep you full for hours.

Servings 4 toasts

Ingredients

  

  • 1/2 cup Yellow Moong Dal/lentil soaked for 6-8 hours or overnight
  • 1 tsp minced ginger
  • 1 tsp minced green chili/jalapeno
  • 2 tbsp diced onion
  • 2 tbsp chopped cilantro/coriander leaves/hara dhania
  • 1 Jalapeno/green chili chopped optional
  • 1/4 tsp Eno/Fruit salt or a pinch of baking soda
  • salt as per taste
  • 4 slices bread can use gluten free bread
  • oil/ghee/butter for pan frying the toast Use oil for vegan option

Instructions

 

  • Drain the soaked dal/lentil and grind smooth with very little water
  • Add minced ginger,green chilies,diced onions,chopped cilantro and jalapeno to the ground dal/lentils
  • Add salt and eno/baking soda to the dal mix
  • Warm the pan/griddle/tava on medium/medium high and put a little oil/ghee/butter on the pan
  • On one side of the bread put enough dal/lentil mix to completely cover the bread with a thin layer of dal/lentils
  • Put dal/lentil side face down on the hot greased pan
  • On the other side of the bread, apply the dal/lentil mix with a spoon(we want to cover both sides of the bread with dal/lentil mixture)
  • Apply oil/ghee/butter to the side facing up and carefully flip the bread so that both sides turn crisp and golden
  • Cut into thin strips or desired shape and serve hot with chutneys

Notes

1/2 cup soaked dal yields 1 cup ground dal. You can grind ginger and green chilies/jalapenos along with the dal/lentils. You can add grated carrots,cabbage,finely chopped colored peppers to make it more nutritious. I have also made it with ground green moong dal/pesarattu batter and left over Mixed Dal dosa batter and they turn out very good.I would not recommend this with hard bread like ciabatta. It tastes great with brown bread. Do not skip the Eno/baking soda. Eno is preferred.
