Minced Chicken Kebabs

Flavorful,healthy and cooks fast are all the things I like about this recipe. I make this very often at home,specially during weekdays. I marinate everything in the morning and put it in the fridge and when I get back from work, just add some onions and cilantro/coriander and the kebabs are ready in about 10 minutes.

I do make it a lot when we are on our Whole30 detox. I have to come up with new dishes at every meal,specially when you have a teenager who is also doing the whole30. We like to add it to our salad to make a complete meal.

Since no bread,bread crumbs or any type of flour is added for binding, its great for people who are sensitive to gluten. I have also made it completely fatfree by not using any ghee/oil, instead just spray some cooking spray and it tastes just as great. Make sure to cover the pan so the kebabs get to cook in there juices and remain moist.

Made in a spoonful of oil, these kebabs are a perfect high protein, low fat appetizer which is ready in minutes. Top it over salad and its a complete meal.

Ingredients

  

  • 1 pound Minced/Ground Chicken
  • 2 tsp ginger minced
  • 2 tsp garlic minced
  • 3 Green chilies minced
  • 1/4 tsp Garam Masala
  • 1/2 tsp Lal Mirch/Red Chili powder
  • 1/2 tsp Dhania/Coriander powder
  • 1/2 tsp Pakprika
  • 1/2 tsp Kala Namak/Black salt
  • 1 tsp kasoori Methi-washed and squeezed
  • Juice of half Lemon/lime
  • 1 tbsp oil
  • Salt as per taste
  • 1/2 cup chopped onion
  • 1/2 cup chopped Cilantro/Dhania/Coriander
  • Ghee/oil for cooking

Instructions

 

  • Mix all ingredients, except onions and cilantro/coriander and keep overnight in fridge or at least for few hours for flavors to blend in.
  • Heat ghee/oil in a pan.
  • Mix chopped onions and coriander to the chicken.
  • Shape into small discs and cook on medium till brown on both sides. Cover for some time to ensure it cooks all the way through.
  • Enjoy over salad to make a complete meal or as an appetizer with onions, Green chilies and slices of lemon.

Notes

It tastes better when you marinate it, but if you have to make it immediately, it still tastes good. You can add more oil during marination, I wanted a lowfat version, so I just used 1 tbsp of oil.Can also add an egg white to make it easier to shape/bind and make it more moist.

Ingredients

Mix chicken well with ginger,garlic,green chilies, dry spices,lemon/lime juice and oil and set aside to marinate.

Mix the marinated minced chicken with chopped onions and cilantro

Heat pan, put ghee/oil and place discs /kebabs in pan

Brown on both sides and enjoy with Green chatni and sliced onions as an appetizer

Or on top of salad to make a meal out of it.

    How long do you think it takes to cook? I am making this first time and I am a bit nervous if it is undercooked.thanks

      Hi Akanksha, you can cover and cook as well if you think it might be undercooked. Since the kebabs are pretty small and not very thick, the inside gets cooked by the time the outside gets browned.

    I made these for an Iftaar party and everyone loved it. The kebabs were nice and juicy. The ginger flavour was the best.
    I did add 1 egg in the mix to bind everything nicely
