This Mexican inspired appetizer is a crowd pleaser. The beans, spinach and carrots add to the nutrition quotient while the cheeses give the right amount of indulgence.
The addition of garlic and jalapenos adds the right amount of heat and flavor. It’s versatile,you can put whatever vegetables you have on hand or you can just make it with beans, cream cheese and olives! I did soak and boil the black beans,but you can easily use the canned ones and whip it up in no time. Don’t have Black beans, then try it with Kidney beans/Rajma or Pinto beans. I have made these many times for parties,because not only are they easy to put together,they can be made a day ahead.Appetizers don’t get any easier than that!

Mexican Spirals/ Black Bean Pinwheels
Equipment
-
1 pressure cooker or instant pot
-
1 strainer
-
1 bowl
-
1 plate
-
1 cling wrap or saran wrap
-
1 sharp knife
Ingredients
For the Bean Layer
- 1 cup Black Beans soaked overnight or 2 Can Black Beans, rinsed and drained
- 1 Jalapeno roughly chopped
- 2 cloves Garlic
- salt as per taste
For the Cheese Layer
- 1 8 oz package Cream Cheese
- 1/2 cup Sour Cream
- 1 cup Mexican 4 cheese blend ,shredded or pepperjack shredded or any kind thats available
- 1/2 cup Red Onion Chopped
- 1 tsp Minced Garlic or Garlic Powder-1/2 tsp
- Minced Jalapenos-as per taste optional
- Salt as per taste
For Assembling
- 5-6 Tortillas 10 inch tortillas
- 2 Carrots grated
- 2 cup Baby spinach leaves washed and dried
Instructions
For the Bean Layer

Rinse soaked beans and add 2 cups water,jalapeno, garlic and salt. Give three whistles in pressure cooker or just cook in a pot if you don’t have a pressure cooker. Alternatively, just use 1 can black beans.

Let beans cool, strain and blend in food processor. If using canned beans, blend with 1/2 tsp Garlic Powder.
For the Cheese Layer

Mix all ingredients for the cheese layer.
Assembling

Spread Black Bean Mixture on Tortilla.

Spread Cheese Mixture on top of the beans, but only on half of the bean /tortilla (this is because when you roll, the cheese mix will spread all over)

In middle of tortilla, place spinach leaves and grated carrots.

Start rolling from cheese side,roll tightly.

Place in plastic wrap and refrigerate. Cut into spirals just before serving.

Serve with Pico De Gallo or Habanero Pepper Chatni
Notes
If you live in a place where tortillas are not available, use Roomali Roti.
Here is the step by step pictorial recipe-
Boil, soaked Black beans with garlic, jalapeno and salt and strain.
In a food processor blend the black beans into a paste
Mix all ingredients for Cheese filling
Assemble tortillas,cheese filling,black beans, grated carrots and baby spinach
Spread a thin layer of beans on the tortilla
Put cheese filling on half the bean mixture
Put a layer of spinach, top with grated carrots
Roll tightly from cheese end
Put in cling wrap and refrigerate for a at least 1 hour.You can even make it the day before.
Just before serving, remove wrap and slice into 1/2 inch thick spirals. Enjoy with Pico de Gallo or Habanero Pepper Chatni.
