Mexican Spirals/ Black Bean Pinwheels

posted in: Party Appetizers | 20

This Mexican inspired appetizer is a crowd pleaser. The beans, spinach and carrots add to the nutrition quotient while the cheeses give the right amount of indulgence.

The addition of garlic and jalapenos adds the right amount of heat and flavor. It’s versatile, you can put whatever vegetables you have on hand or you can just make it with beans, cream cheese and olives! I did soak and boil the black beans, but you can easily use the canned ones and whip it up in no time. Don’t have Black beans, then try it with Kidney beans/Rajma or Pinto beans. Also try these Mexican inspired recipes-  Black Bean Soup, Strawberry Kiwi salsa,Restaurant style salsa in minutes,Mango Peach Salsa, Guacamole with make ahead instructions and Jalapeno Poppers in Puff pastry.

I have made these many times for parties, because not only are they easy to put together, they can be made a day ahead.Appetizers don’t get any easier than that!

Here is the written recipe followed by the pictorial one.
