Mexican 7 Layer Bean Dip

An appetizer that needs only 10 minutes, feeds a crowd, looks as good as it tastes-look no further!!!  This 7 layer dip is so easy to make that my teenage daughter is the one to regularly make it in our house whenever we have company over.  She has mastered it so well that I asked her to be the author of this recipe! Yay her first published recipe!

 

I love Mexican food for its bold flavors,fresh vegetables and vibrant colors-somehow it reminds me of Indian food! I guess you can take an Indian out of India but not the Indianness(if that is even a word) out of them. Deep down I am always looking for spicy,flavorful food!

 

Sharing a picture of a Chipotle Burrito bowl party I had recently at my house. I made Cilantro Lime Rice, Black Beans, Chicken for the meat eaters, Sofritas(Mexican style tofu) for the vegetarians, corn salsa,pico de gallo and all the trimmings. Of course the 7 layer dip was the appetizer!  Will update this post as I write and share the other recipes as well. For dessert we had Blueberry Crumble-another semi homemade dessert made by my daughter-that’s how easy it is!

Mexican 7 Layer Bean Dip

A make ahead Mexican dip that looks and tastes delicious as Refried beans are layered with guacamole,sour cream cheese,onions,tomatoes,jalapenos and avocado slices.

Ingredients

  

  • Refried Beans-2 cans 16 oz/454 gms/1lb,each(I used Taco Bell Vegetarian Blend)
  • 4 tbsp salsa
  • 1 1/2 tsp Taco Seasoning I used Taco Bell brand seasoning packet
  • 8 oz sour cream optional,read notes.Omit for vegan option
  • 1 cup Guacamole optional,read notes
  • 3/4-1 cup shredded Mexican Cheese or any variety Use vegan cheese for vegan option
  • 1 chopped onion small
  • 1-2 chopped tomatoes
  • 1 cup shredded lettuce optional
  • Few chopped olives cilantro/coriander,Avocado and Jalapeno slices

Instructions

 

  • In a bowl mix refried beans,salsa and taco seasoning.
  • In a large rectangular 9*13 pan, spread a layer of the refried beans.
  • Mix the sour cream and guacamole together and spread over the beans.
  • Sprinkle the cheese over the Sour cream-Guacamole mixture.
  • Spread lettuce over the cheese.
  • Top with olives,cilantro,jalapeno and Avocado slices.
  • Serve with Tortilla chips.

Notes

For a low fat version omit sour cream or use greek yogurt.
Use guacamole only if it will be consumed immediately. I have found mixing guacamole with sour cream prevents guacamole from discoloration.If making ahead for parties, prepare the bean, sour cream/guacamole layer and cheese from before and refrigerate. Layer the chopped vegetables just before serving. Serving in a clear glass container, makes it look pretty as all the layers become visible.

Ingredients

Mix beans taco seasoning and salsa

Mix sour cream and guacamole and spread over the bean layer(optional,vegans use only guacamole)

Put cheese and all the chopped vegetables(vegans use vegan cheese or omit the cheese)

Enjoy with tortilla chips
