Such a quick snack to make when you have friends and family who drop in and you just have to come up with something quickly. Last year when mom was visiting, some friends stopped by to meet her and spend some time with her. I started making tea and mom quickly got some raw almonds(that’s all we had at home at the time) put them in a microwave safe bowl with all the spices, some ghee and microwaved it for a few minutes. It actually tasted pretty good just by itself, even without any topping!
But putting the chopped onions, Green chilies,cilantro/coriander and lemon juice just makes it taste like the streetfood sold in India. You can also top it with some Green Chatni to make it taste even better.
You can certainly try with any other nuts as well. I used Roasted, salted peanuts, but if using raw nuts, do increase the salt and cook time accordingly.
Masala peanuts in 2 minutes-Spicy peanuts in 2 minutes
Ingredients
- 1 cup peanuts I had roasted, salted at home, so thats what I used
- 1/2 tsp lal mirch powder/Red Chili Powder
- 1/2 tsp paprika
- 1/2 tsp Black salt
- 1 to 1 1/2 tsp ghee oil or butter( I used ghee,vegans use oil)
Instructions

Mix all ingredients and put in microwave for 1 minute

Stir and microwave for 1 more minute
-
Ready!
Notes
Let it cool for a few minutes, it becomes crispy upon cooling.
You can use almonds and cashews as well.
Here is the step by step pictorial recipe-
Take 1 cup peanuts
Add all the spices and ghee/butter/oil(I used ghee)
Microwave for 1 minute, stir and then microwave for another minute
Cool and top with chopped onions, Green Chilies, Chopped coriander/cilantro and squeeze of lime juice.
