Three ingredients ,a blender and less than 5 minutes is all you need to make this luscious Mango Kulfi. Since good fresh mangoes are not easily available where I live, I have used canned mango pulp. On the plus side, since mango pulp is easily available all year, mango kulfi can be enjoyed all year!
This is inspired by my traditional 3 ingredient malai kulfi recipe. I simply replaced the evaporated milk in the original recipe with the mango pulp and voila, delicious Mango kulfi!

Mango Kulfi
Ingredients
- 1 can Alphonso mango pulp 30 ounces/850 gms
- 1 can condensed milk/14 oz/356 gms
- 1 pint/473 ml Heavy whipping cream
- 1/8 tsp cardamom powder
- few strands of saffron
- Almonds and pistachios for garnishing
Instructions

Add Condensed milk,mango pulp,cardamom powder and saffron in a blender and blend well.

Add whipping cream and blend at a low speed,enough to mix all the ingredients being careful to not blend for too long as the cream can turn to butter.

Pour into kulfi molds or any container with a tight fitting lid or ice cube trays and freeze overnight

Run the mold under running water, open lid and run a knife around the kulfi to unmold

Sprinkle chopped nuts and additional saffron and serve immediately

Ingredients
Pour the entire can of condensed milk into blender
Add mango pulp
Add cardamom powder and saffron strands(optional) and blend till everything mixes well
Add heavy whipping cream and blend at low speed just until the cream mixes well with the other ingredients
Pour into kulfi molds,cover and freeze overnight
Unmold and top with additional almonds ,pistachios and saffron
