Kesariya Chicken Tikka-Saffron Infused Dry Chicken

Succulent pieces of chicken, infused with saffron and spices, make this a heavenly appetizer which is not just high on taste but also very healthy!

The entire dish is literally made in 2 tbsps of ghee/oil. There is no need to fry onions, ginger or garlic and the entire meal is ready in under 30 minutes.

it can be made on the grill or on the pan, both ways its delicious. When I want to serve it as a meal for dinner, I just make a salad to go with it and it becomes a complete meal.

 

 

Kesariya Chicken Tikka-Saffron Infused Dry Chicken

Ingredients

  

For Marinating

  • 2 pounds Chicken Breast washed and cut into 1″pieces
  • 1 tbsp Ginger minced
  • 1 tbsp garlic minced
  • 1 tsp Green chilies minced
  • 1 tbsp kasoori Methi washed
  • Juice of 1/2 lemon
  • 2-3 tbsp yogurt
  • 1 tsp Coriander/Dhaniya powder
  • 1/2 tsp Paprika
  • 1/4 tsp Green Cardamom/elaichi powder
  • 1/4 tsp Garam masala
  • 1/8 tsp Ajwain/carom seeds-crushed
  • Salt as per taste I used about 1 tsp
  • 1 tsp Mustard oil and 2 tsp any oil

For Preparing

  • 1 tbsp Ghee/butter
  • 1/2 tsp Jeera/cumin
  • 2 Green Cardamoms crushed
  • 15-20 strands of saffron

Instructions

 

  • Mix the chicken with all ingredients for the marinade and marinate overnight.
  • In hot ghee, add jeera/cumin and let it splutter.
  • Add the crushed Green Cardamoms and Kesar/Saffron.
  • Add Chicken and cook for a few minutes.
  • Place a lid and turn down heat to medium and cook till almost done.
  • Remove cover and cook till all water dries up and chicken is fully done.
  • Garnish with more strands of saffron, onions, cilantro/coriander and green chilies.
  • Enjoy

Notes

Mustard Oil gives a nice flavor, if you don’t like the taste of Mustard oil, just use any oil for marinating.The more saffron you use the better the flavor. I landed up using twice as much as what is shown in picture. You can also mix some saffron in a little bit of warm milk and sprinkle that in the end on the chicken. Will give lovely color and added flavor!

Ingredients for marinade

Place all ingredients for marinade together

Mix well and keep overnight in refrigerator

In hot Ghee/butter/oil add Jeera/cumin, let it crackle and add saffron and crushed green cardamoms

Add chicken and stir for some time

 Cook covered till almost done, open lid and dry all the water
