Instant Rabri-Only 4 ingredients and 4 minute recipe

Four minutes, three ingredients and one bowl make this creamy Rabri which tastes as good if not better than the one sold at Mithai shops! After my Instant Kalakand recipe became one of my most viewed recipes, and readers responded by saying they not only loved the taste but also how easy and fast it was to make( 6-8 minutes depending on your microwave)!

I decided to play around with the ingredients and cook times and hit the jackpot with this Rabri recipe. Not only did it need only 3 ingredients, it was done in flat 4 minutes and there was only 1 pan to clean! It doesn’t get any easier than that.Some of my other popular,instant,EGGLESS desserts are Mango Mousse-No Eggs,Gelatin or Agar Agar,Blueberry Crumble/CobblerCookie PizzaKheer in a Crockpot, Lauki Ka Halwa, Sooji Ka Halwa, Meethi Mathi and Besan ke laddoo.

Rabri is so versatile,goes so well with Gulab jamun, Jalebi, malpua, Shahi Tukra or by itself. This recipe of rabri can be consumed during fasting/navratri as there is no grain in it.

UPDATE-If you are not fasting and want the rabri to be daanedaar/granular, then take 2 slices of white bread.  Remove the sides. Leave on a paper towel on the counter to air out for an hour. Once the bread is a bit dry Put in a food processor and make crumbs of the bread. Add the fresh bread crumbs to the Rabri after its done cooking and before you put in refrigerator to cool. This adds the daanedaar/granular texture to the rabri.

Ingredients

  

  • 1 1/2 cups Milk powder I used Nido brand
  • 7 0 z/200 gms/1/2 can of Condensed milk
  • 250 ml heavy whipping cream
  • 3/4 to 1 cup milk
  • Green cardamom powder
  • few strands of saffron
  • pistachios and almonds for garnishing

Instructions

 

  • In a bowl mix milk powder,condensed milk,whipping cream,elaichi/cardamom powder and saffron.
  • Microwave for 2 minutes, stir well after.
  • Microwave for 1 minute,stir well after.
  • Microwave again for 1 minute and stir well
  • Its done if you are serving right away!
  • If you like to serve it chilled, like I do, then put milk,stir well and chill.
  • Garnish with additional saffron and nuts

Notes

It was perfect texture for serving warm, it will thicken upon cooling,so I added 2 % milk. You can use any kind of milk. I used about 3/4 cup milk. Add more if you like rabri to be thinner.If you are not fasting and would like the rabri to be daanedaar/granular, then take 2 slices of white bread.  Remove the sides. Here is the step by step pictorial recipe-

Ingredients

To the milk powder add the condensed milk

Pour the whipping cream on top

Add saffron and ground cardamom seeds/elaichi dana and mix well

Microwave for 2 minutes, stir and microwave for 1 minute, stir and place in microwave again for 1 minute.

That’s it, its done! Garnish and serve hot immediately or chill and serve.

If you are not fasting and would like the rabri to be daanedaar/granular then add the white bread crumbs at this time

(It will thicken upon chilling, add milk at this point, mix and then put in refrigerator to chill)

      Hi Namrata, I haven’t tried without a microwave,so cant give you an exact time. Put the ingredients on medium and stir till you get the right consistency.Please do share how it turns out on the stove, would love to hear back.

    I don’t have access to heavy cream, will low fat cream make a significant difference in texture?

      Hi Hima,I haven’t tried with low fat cream,so don’t really know how the texture would be. I would put one or two tablespoons of unsalted butter along with low fat cream to make up for the lack of fat. that should help with texture. Would love to know how it finally turned out.
