The fresh flavors of Cilantro,Mint,lemon juice and Green chilies makes this a very flavorful chatni/dip. Few ingredients and spices give a very clean and distinct taste to this chatni. No street food in India is complete without this chatni.
This is a very versatile Chatni, you can make it as hot or as mild as you like, you can skip the mint if you choose to, you can replace the cashews with peanuts and fresh Lemon/Lime juice with the bottled kind. These substitutions will not take away from the flavors. Goes so well with Fat Free Dahi Vadas with Greek Yogurt-No fry recipe, Quinoa Oatmeal Dhokla, Vegetable Shami Kebabs, Palak Aloo ke Pakore-Spinach Potato Fritters, Green Moong Dhokla/ Mung Bean Dhokla and Spinach Potato cakes/Palak Aloo ki Tikki with Almond Flour and Flaxseed.
With only 4 ingredients and its ability to freeze well, this is always found in my home! The chatni that goes hand in hand with this Cilantro mint chatni is the sweet tamarind chatni. I use a shortcut and make Instant Tamarind chatni out of Apple Butter! Looks and tastes just like the tamarind one, except its ready in few minutes and needs no cooking. Also has a long shelf life! Some other chatnis to try out are Coconut Chatni from desiccated coconut, Onion tomato Kara Chatni ,Coconut Chatni using frozen coconut and Habanero Pepper Chatni.

Moving on to the recipe, here is the written recipe followed by the step by step pictorial one-
Hari chatni/Green chatni/Cilantro Mint Chatni
Ingredients
- 6 cups chopped cilantro/Coriander/Dhaniya washed
- 1 cup mint washed
- 4-5 Green chilies or as per preference
- 1/3 cup cashew/3 tbsp Almond or cashew flour
- juice of 2-3 lemons depends on size
- salt a needed I used approx 1 tsp
- 1/4 cup water or more as needed to blend
Instructions

Wash the Cilantro/Coriander/Dhaniya and Mint well and chop coarsely.

Wash and chop Green chilies coarsely.

Take out juice of lemons.

Put all ingredients in a blender and blend till smooth.

Don’t put too much water, put as needed to blend.
To Freeze
-
Pour the chatni into a Gallon size FREEZER bag and take out all the air.

Close the zip and roll it flat.

Break/snap a piece of just how much is required!
Notes
It freezes very well and its extremely easy to break as much as you need from the ziploc bag.
Its Important to use Freezer Bags, instead of normal ziploc bags, as they are thicker and meant for the freezer.
