Celebrating 2 milestones with this cake! First its been over 6 months since I have been blogging and second, my Facebook page reached over 500 likes! Thanks to family, friends and readers who have helped me get this far by encouraging me with all the likes,shares and comments. For some of you who know me, you know that I work for a whopping 4 months of the year from January to April 15,or as I like to call it “The Tax Season”! When you have to be at work at 8 am and you don’t get home till 9:30, there is really not much time left for anything else.
My milestones came and went, there was obviously nothing I could do about it. I knew I definitely wanted to make something sweet and also that it would have to be eggless. I had marked this recipe even before I became a blogger for trying out in the future. This recipe was shared by my friend and fellow blogger Ritu and you can read about it here, Thanks Ritu for a lovely recipe,it turned out great.

On this trip I went to my cousins house and tasted the best ever home made Black forest cake made by my bhabi,Shalini, and what surprised me was it was Eggless. It not only was moist and delicious it was also decorated beautifully. Till now eggless baking scared me, I always thought eggless cakes are dense and hard. After eating I was hooked. I obviously got all the recipes from her as well as my cousin,Sangita, who actually teaches Eggless baking classes.
This Dates walnut cake turned out so good that it has given me the confidence to foray into Eggless baking and share more recipes with my lovely readers.
Dates Walnut Eggless Vegan Cake
Ingredients
- 2 cups All Purpose Flour/Maida
- 2 cups water
- 1 cup Dates/khajoor chopped
- 1 cup walnuts chopped
- 3/4 cup sugar
- 1/2 cup oil
- 1.5 tsp cinnamon powder
- 1/4 tsp salt
- 1 tsp baking powder
- 2 tsp baking soda
Instructions

Preheat oven to 350 F/180 C

Grease and flour a Loaf pan or a 9 inch pan

In a pan mix dates,water,sugar,oil and cinnamon.

Bring the mixture to a boil.

Turn down the heat and let it simmer for 30 minutes, stirring in between.

The mixture will become gelatinous.COOL COMPLETELY.

Mix Flour,salt,baking soda and baking powder and sieve through at least 3 times.

Whisk in flour mixture,little at a time to the cooled dates mixture.

Stir in the chopped walnuts.

Pour into the prepared pan and decorate with walnuts,optional.

Bake for 45- 50 minutes.

Here is the step by step pictorial recipe-
Ingredients
Sieve Flour, baking soda, baking powder and salt, atleast 3-4 times to incorporate air.
Mix sugar,dates,water,oil and cinnamon
Bring to a boil and simmer for 30 minutes, Stir occasionally. COOL COMPLETELY.
Cooled date mix,sieved dry ingredients and chopped walnuts.
Gradually mix in flour to the date mixture.
Use a whisk to incorporate the two.
Mix in the chopped walnuts.
Pour batter into a greased and floured 9 inch cake pan or a loaf pan.
Bake for 45-50 minutes or til toothpick comes out clean.

Please could you tell me what sugar you used in this recipe and possible alternatives?
Also what frosting would you recommend for date and walnut cake? Since it’s a birthday cake is rather use some.

I have used white sugar. You can use brown sugar as an alternative. Cream cheese or Butter cream icing will both taste good with this cake.

Hello,
I followed your recipe and cooked the cake in a loaf tin until the skewer came out clean, about 50 minutes for my oven. The cake sunk in the middle. Any ideas why? What did I do wrong?

Hi Liz, sorry to hear that the cake sank in the middle. Can you tell me if you did anything different? Like used different measurements or replaced some ingredients with something else.

The batter came out too dry could not pour at all. Added a cup.of apple puree. Hope it will be edible
