Cookie Pizza/Fruit Pizza

Cookie dough topped with Cream cheese icing, topped with fresh summer fruits, whats not to love about this dessert! Its so easy to put together, specially since we are using readymade refrigerated cookie dough!

I have been making this for many years now, first got this recipe from a cookbook published by a local church in our town.

I love this recipe for its ease and simplicity as well as for the bright and colorful fruits that are used for decoration. I have used Raspberries and Blueberries as well at other times. Just use whats local or in season, being careful not to use fruits that oxidize and change color like bananas and apples.

Always a hit with children and adults alike!

Ingredients

  

  • 1 18 oz Refrigerated Chocolate chip cookie dough or any kind of cookie dough

For Cream Cheese Icing

  • 1 8 oz package of Cream Cheese
  • 4 tbsp Unsalted Butter
  • 1 cup Confectioners Sugar more if you like it sweeter
  • 1 tsp Vanilla extract

For Topping

  • Strawberries Grapes,Kiwi,Mandarin Oranges or any fruit of choice

Instructions

 

  • Preheat oven to 375 F/190 C
  • On a 12 inch pizza pan, spread the cookie dough,leaving a 1/2 to 3/4 inch gap between the rim and dough(the dough will expand and even out)
  • Bake for 11-12 minutes,Remove immediately and cool completely.

For Cream Cheese Icing

  • Let the butter and cream cheese come to room temperature(Don’t melt)
  • Beat the Butter and Cream Cheese together
  • Mix in the Vanilla Extract
  • Put little sugar at a time, till its all blended in and cream cheese is fluffy
  • On cooled cookie dough,spread the icing evenly

For Fruit topping

  • Wash and cut fruits and decorate as you wish

Notes

Cool the dough completely before icing. Place the butter and cream cheese on the countertop for it to come to room temperature. Use any fruit,just be cautious that if you are going to consume it after some time fruits like bananas and apple oxidize and change color. Avoid those types of fruits.

 Beat Cream cheese and Butter,add vanilla extract

Add sugar,little at a time, till fully incorporated

Spread on cooled cookie dough

Wash and cut fruits for decorating

Decorate as you wish
