Sugar Free, Fat Free,Gluten Free,Vegan and with only four ingredients these power packed energy balls/laddoos provide protein and carbohydrates which makes it a perfect snack post workout or an after school snack for children. The hint of chocolate from cocoa and vanilla extract will definitely win the children.
I like to call Dates as Gods candy or natures candy. It is so sweet that this recipe was entirely sweetened by just Dates, no sugar! I made a Vegan Dates Walnut Cake and took it to my friends house and it was such a hit. No one could believe it was eggless, it was so moist!
It’s also makes a’ great breakfast on the go’ and a wonderful snack for picky children who don’t want to have nuts. If you are allergic to nuts, use raisins or chocolate chips, though I personally love the crunch of the nuts and the protein from them! .I made this recently on a day when I was fasting. I had it with a glass of milk and it kept me going for a few hours! A word of caution,while roasting the nuts, use low to medium flame and do not over cook them. The nuts may seem a bit soft but they will crisp up when they cool. With just a handful of ingredients this recipe is a keeper.
Indians make laddoos as an offering to Lord Ganesha on his birthday,”Ganesh Chaturthi” as that is supposed to be his favorite sweet. I made my Eco Friendly.Bio-degradable Ganesha ,Coconut laddos made with dessicated coconut and condensed milk and Besan Ke Laddoos along with the Chocolates,dates nut laddoos as an offering to lord Ganesha. Some of my other eggless desserts are Blueberry Crumble, Kheer in a crockpot, Sooji ka Halwa, and Dudhi ka Halwa.
Here is the written recipe followed by the pictorial one-
Chocolate,Dates and Nut Laddoo/Energy Balls
Ingredients
- 1 cup mixed nuts-Pistachios Almonds,Walnuts and Cashews in equal portions(you can use only one type or any combination of nuts)
- 1 cup Dates deseeded and coarsely chopped(I used Medjool dates)
- 4 tsps cocoa powder
- 1/2 tsp vanilla extract
- Sprinkles Coconut and Cocoa for Rolling(optional)
Instructions

Toast the nuts on medium flame for few minutes,set aside to cool

Microwave the dates for 30-45 seconds to soften them a bit

In a food processor, pulse the nuts to coarsely chop them.

Pulse the dates with vanilla and cocao powder till it becomes a smooth paste.

Mix the nuts and dates till it becomes a dough, and roll into balls.

Rolling in coconut,cocoa or sprinkles is optional

Ingredients
Roast the nuts on a medium flame for a few minutes and cool
Grind the nuts coarsely
Soften the dates and make a paste of the dates. Add all the ingredients
Mix it together to form a dough
Lightly grease palms and roll into laddoos/balls. Makes 16-18 laddoos.

Hi Raahmi,so glad it turned out yummy. It can last for a very long time in the fridge. Just micro for a few seconds before eating or just keep it out to bring it to room temperature before eating. I always refrigerate and keep it. It should be fine for a few days if you leave it out. Both nuts and dates don’t spoil that easily.
