Burrito Bowl-Chipotle Copycat Recipe

Burrito Bowl usually has all the ingredients that go into a burrito like rice,beans, some kind of protein-tofu for the vegetarians,chicken or pork for the meat eaters. This is then topped with lettuce, pico de gallo,salsa, guacamole,sour cream, cheese,cilantro and jalapenos.

The Burrito bowl is healthier and has fewer calories as compared to a burrito as the tortilla is missing. This makes it a great option for those suffering from gluten intolerance. Its also easy to customize as per individual tastes, vegans can skip the cheese and sour cream, meat eaters can add chicken or pork, spice lovers can kick it up a notch by the addition of jalapenos and spicy salsa.

Of course the base is Black beans and Cilantro Lime Rice and everything else is just topped over that. I had made the Burrito bowl over the holidays when I had some friends over. Since it was the holidays and kids were also in town , I wanted to make something that appealed to the teenagers as well as older folks like us!

I like to lay out the ingredients buffet style and let my guests assemble their own burrito bowls. I do serve the Cilantro Lime rice, Black beans and the Sofritas as well as chicken hot and keep the toppings in the refrigerator till I am ready to serve. Its always a hit with kids,teenagers and grown ups. For appetizers I like to go with make ahead Mexican Spiral/Black Bean Pinwheels and Mexican Seven layer Bean Dip.

Burrito Bowl-Chipotle Copycat Recipe

A copy cat version of the famous Chipotle Burrito Bowl that consists of Cilantro Lime Rice, Black Beans,Sofritas and topped with lettuce,tomatoes, pico de gallo, guacamole and salsa.

Servings 6 Burrito Bowls

Ingredients

  

  • 1/2 Cup Chipotle Style Cilantro Lime rice
  • 1/2 Cup Chipotle Style Black beans
  • 1/2 cup Sofritas Mexican Style Tofuor chicken or pork
  • Iceberg lettuce shredded
  • Tomatoes Onions,Cilantro and jalapenos,chopped
  • 1-2 tbsp of Guacamole
  • 1-2 tbsp salsa any kind(I used corn salsa and Regular home made salsa)
  • 1-2 tbsp pico de gallo
  • 1-2 tbsp Mexican Blend cheese shredded(omit for a vegan option)
  • 1-2 tsp sour cream omit for a vegan option

Instructions

 

  • In a bowl place Cilantro Lime rice,Black Beans,Sofritas(Mexican style tofu) or protein of choice
  • Top with Shredded lettuce,tomatoes,onions,cilantro,guacamole,salsa,pico de gallo,cheese and sour cream(omit cheese and sour cream for a vegan option)

Notes

Burrito bowls are very easy to customize as per individual tastes and preferences. I like to serve the rice, beans and sofritas hot and the rest of the toppings keep them refrigerated until ready to assemble. I like to lay out everything buffet style and let my guests assemble their own burrito bowls.
