Chipotle Style Black Beans

Chipotle style Black Beans are simmered in onions,garlic,jalapenos and seasoning to make a delicious meal as is or accompanied with Cilantro lime Rice and topped with Chicken  or Sofritas (Mexican Style Tofu), lettuce, Pico de gallo, corn salsa, guacamole, cheese and sour cream!

I made these Black Beans recently  when I had a few friends over for dinner. Since it was during the holidays and all the kids were home from colleges, I really wanted to make something that would appeal to the teenage/youngsters in the group as well as the older folks. I didn’t want a traditional Indian meal and also wanted to involve my daughter in the kitchen. I opted for the Chipotle style Burrito bowl.

My daughter made the 7 layer dip and the Blueberry Crumble-both real easy to put together and soooo yummy! She felt so accomplished when she got compliments from everyone. It’s a great way to spend time together, build memories and hone her cooking skills.

Chipotle Style Black Beans

Chipotle style Black Beans simmered in onions,garlic,jalapenos and seasonings. Pairs beautifully with Cilantro Lime rice. A great vegan and gluten free option.

Ingredients

  

  • Black beans 1 pound/16 oz/454 grams You can use canned beans
  • 1 3/4 cup water for cooking the Beans
  • 1 onion chopped
  • 1 1/2 tbsp garlic minced
  • 1-2 tsp of Green Chilies/Jalapenos minced
  • 1 1/2 tbsp Taco Seasoning
  • 1/4 cup plus 2 tbsp salsa
  • 1 1/2 tsp Cumin/Jeera
  • 3 tbsp oil
  • Juice of 1/2 to 1 lime/lemon
  • Salt as needed being careful as salsa and taco seasoning both have salt

Instructions

 

  • Soak Beans overnight.
  • In hot oil, add cumin and let it crackle
  • Add Garlic and green chilies/jalapenos and cook till the raw smell goes away.
  • Add onions and cook till pink and translucent
  • Add Taco Seasoning,stir and add salsa and cook for a few minutes.
  • Add to Black Beans and cook till done(I used a Pressure and gave one whistle on high and one on lowest setting. Let pressure release naturally)
  • Give a generous squeeze of lemon/lime
  • Garnish with cilantro and onions

Notes

Canned Beans can be used instead of dry beans. If using canned,cook just till the flavors blend in with the beans,we dont really need to cook the beans as such. If pressure cooker is not available, use any pan with a tight fitting lid, bring to a boil and simmer till beans are cooked.

Add salsa and cook for few minutes

Add to Black Beans and cook together till beans are cooked.

Add a generous squeeze of lemon/lime juice and garnish with onions and cilantro
