Breadbowl Sandwich with Spicy Mayo

A showstopping sandwich in which a loaf of bread is hollowed out and filled with vegetables,cheese and drizzled with spicy mayo! Every time I ate at Subway, I always felt guilty about eating too many carbs even though my sandwich was loaded with vegetables. I decided to scoop out all the bread and make a bowl out of it and fill it with my favorite veggies and drizzle with spicy mayo!

If we can have soup in a bread bowl then why not salad in a bread bowl or maybe we could call it a breadbowl sandwich or a bread loaf sandwich! No matter what we call it, it looks impressive. You can use a long French or Italian loaf like I did and divide it into 4 small sandwiches or make individual sandwiches in Boule/round bread. There is no limit to what can be filled in the bread bowl/loaf! Paneer, tofu,corn,peppers,spinach,carrots,jalapeno peppers, pickles, cheese, meats,meatballs-anything your heart desires!

The spicy mayo is so easy to make, just a few ingredients mixed together makes the sandwich taste so much better than the boring regular mayo.It provides a nice kick. Its perfect picnic food-just assemble the sandwich without any spicy mayo and drizzle well just before serving. Children love to take it in their school lunch boxes as well(send mayo on the side).  Some of my other popular sandwich recipes are Paneer Pesto Corn Sandwich, Portobello Mushroom Sandwich/Burger, and Spinach Veggie Pesto Sandwich on Ciabatta Bread. Breadbowl Sandwich with Spicy Mayo

An impressive sandwich in which a loaf of bread is hollowed out and filled with vegetables,cheese and drizzled with spicy mayo!Scooping out the bread ensures there is room for lots of vegetables and the spicy mayo along with Pepperjack cheese add a bit of spiciness and flavor.

Ingredients

  

  • 1 large loaf or individual bread rolls
  • Pepperjack cheese or any sliced cheese cut in half,in triangles(vegans use vegan cheese/tofu or omit the cheese)
  • 1/2 head Iceberg Lettuce chopped fine
  • 2 to matoes sliced
  • 1 cucumber sliced
  • 1 Red onion thinly sliced
  • Black Olives sliced
  • 1/2 cup Mayo vegans use vegan mayo or omit the mayo
  • 1 tbsp Sriracha Hot sauce/any Red Chili sauce use less if you like it mild
  • 2 tsp ketchup

Instructions

 

  • For Spicy Mayo, mix mayo with Sriracha/chili sauce and ketchup and set aside.
  • Make a cut with a knife,all along the periphery of the bread.Scoop out the bread, making sure the sides and bottom are intact.
  • If you want to toast the sandwich,put cheese slices now and toast/broil in oven
  • If you don’t want to toast,spread the mayo liberally over the loaf.
  • Put cheese slices.
  • Layer the vegetables, starting with lettuce and continuing with other vegetables.
  • Drizzle more spicy mayo and serve with soup or salad.

Notes

You can add Bell peppers/capsicum,pickles,spinach,shredded carrots,jalapeno peppers, paneer, pesto,corn, meats,meatballs-anything that you want. Vegans may use vegan cheese and mayo or entirely skip cheese and mayo.

Ingredients

Use a sharp knife and make a cut all along the edges.

Scoop out the bread,leaving sides and bottom intact(Use bread for croutons or bread crumbs)

Spread Spicy mayo,liberally over the entire loaf

Put cheese slices over the mayo

Put a layer of shredded lettuce

followed by sliced/spiraledonions

followed by sliced cucumbers

followed by sliced tomatoes and olives(feel free to use any veggies of your choice)

Drizzle with more spicy mayo and serve with soup or salad
