Bean Aloo sabzi, Green Beans and Potatoes stirfry

This is what I like to call Indian soul food. Indian home cooking basically consists of Lentils/dals, a simple  vegetable like this one and Rice or Roti. On our travels abroad, which we love to go on, we are not only open to trying different cuisines but actually look forward to tasting and experiencing new things. The saying is right you can take an Indian out of India but you can never take the Indian out of him!.

After a few days, the heart starts craving the simple home cooked meals. What is surprising is my daughter who has been raised here, also doesn’t complain when we head over to an Indian restaurant in another country. In fact, she is also ready for our fix of Dal/chawal/sabzi!  She loves her Ma ki dal and just about any vegetable /sabzi with Paratha and Yogurt. Her favorite sabzis are Bhindi Do pyaza, Gobi Aloo, Bean Aloo , Baingan Bharta, Baingan Aloo.  She loves home made yogurt and if you didn’t read my previous post here is the recipe for it’ Homemade Yogurt 101-with exact temperature and step by step pictures ‘

A staple in every home as well as ours, you just never get tired of eating it. Because Green Beans are one of those vegetables that are available year round in India, I guess its made very often in all homes. I love vegetables in any form and  can eat bowls of sabzi and be in heaven!   I made this recently when I had some friends over for lunch, that’s why the I used 2 pounds of beans and 6 potatoes. It would serve about 10-15 people. If you are making just for your family or a smaller crowd,you can proportionately reduce the ingredients by halving everything. Bean Aloo sabzi, Green Beans and Potatoes stirfry

Course Vegetables and Greens
Cuisine Indian

Ingredients

  

  • 2 pounds Green Beans washed and chopped fine
  • 6 small to medium Red potatoes or any kind
  • 1 large or 2 medium Tomatoes
  • 3-4 tbsp Ghee/oil divided
  • 11/2 tsp Cumin/Jeera
  • 1 tsp plus 1/2 tbsp Turmeric/Haldi divided
  • 1 tbsp Red chili Powder optional if you like it mild
  • 1 tbsp Paprika
  • 3 tbsp Coriander/Dhania powder
  • 1/2 tbsp Black salt/Kala Namak optional,You can use regular salt if you want
  • Chopped Cilantro for Garnishing

Instructions

 

  • Wash and chop Green Beans.
  • Wash and dice potatoes
  • In 2 tbsp ghee/oil add Cumin/Jeera, let it crackle.
  • Add 1 tsp Turmeric/Haldi. Stir
  • Add diced potatoes and 1 tsp salt. Mix and cover with lid.
  • When potatoes are cooked halfway, add Green Beans, 1-2 tbsp ghee/oil,all the dry spices including 1/2 tbsp Turmeric/Haldi and stir fry for few minutes.
  • Add chopped tomatoes. Stir well, cover and cook. Keep stirring occasionally. till done.
  • I like to add the stems of the Cilantro in the last few minutes of cooking as it gives a nice flavor and keep the cilantro leaves for garnishing in the end.

    Makes me feel I should cook it this week. I don’t usually cook potato beans but your recipe is different & looks yummy with tomato ingredient and hence, looking forward to giving it a shot ?
