Badaam Ki Barfi with Almond Flour

With only four ingredients and five minutes to make this is one of the easiest Barfis to make. There is no need to worry about making sugar syrup as well as how thick/stringy the syrup needs to be. Its as simple as mixing the ingredients!

The recipe has been shared by my friend Reeta. She is an amazing cook and I just love her Gujarati dishes. Definitely will plan on some tutorials to learn all the goodies from her, so I can pass on the recipes to my lovely readers.

Reeta makes this very often, but she does grind her own nuts. I am always on the lookout for making the recipe easier and of course I thought of the bag of Almond Flour in my fridge. The recipe is also perfect as it is made with ingredients that we normally always have at home, no special trips to the grocery store. The Barfi turns out soft and moist.

 

The barfi does have a shelf life of almost a month in the refrigerator and about 10-12 days on the countertop, stored in an air tight container, though I can assure you there will be no left overs! Make it for Rakhi,Diwali, Holi or any festival or even when you are fasting during Navratri as the protein from the Almonds keeps you full.

I also like to use Almond Flour instead of bread crumbs in Spinach Potato Cakes/Palak Aloo Ki Tikki. Some of my easy, quick dessert recipes are Instant Shahi Tukra Kalakand, Mango Mousse without egg,gelatin or agar agar and Kheer in a crock pot.

Badaam Ki Barfi with Almond Flour

An easy,5 minutes recipe of Almond Barfi that requires no soaking and grinding of almonds nor do you have to worry about making sugar syrup.

Servings 25 -30 Barfis

Ingredients

  

  • 1 cup Blanched Almond Flour you can finely grind any nut of your choice
  • 1 cup Full Fat Milk Powder I used Nido brand
  • 4 tbsp or 1/4 cup or 1/2 stick Unsalted Butter
  • 7 oz or 200 gms or 1/2 can Condensed Milk
  • Nuts and silver vark for garnishing optional
  • 8 inch square pan wax paper

Instructions

 

  • Grease an 8 inch square pan.
  • In a pan,put butter and condensed milk and heat on medium, just till butter melts.
  • Add Almond flour and milk powder and mix till warmed up.
  • It will be a thick mass, work quickly.
  • Pour into the greased pan and place wax paper over it and use the back of a bowl or spoon to smoothen/flatten it out.
  • Use a sharp knife to cut the barfi while its still warm.
  • Let it cool for an hour,separate and decorate with vark,saffron and additional nuts.

Notes

The original recipe calls for grinding any kind of nut. This can be made with walnuts,pecans,pistachios,cashews or almonds. I made with Almond flour to make a quick version of the barfi. When you separate the barfi, flip them over and use the bottom of the barfi for decorating with vark/nuts as that side is smooth/flat.

Ingredients

In a pan, heat butter and condensed milk over low heat,stirring continuously, till the butter melts

Add Almond flour/nuts and milk powder

Mix the ingredients well till the mixture warms up

Grease a square or rectangular pan and spread evenly. Use wax paper and the back of a bowl to smoothen

Cut into desired shape while still warm and set aside for an hour to set until firm

Separate and flip the barfis and decorate with additional nuts,saffron,vark(optional)
