Such a flavorful, colorful and quick dish to make on a week night. Makes a meal with Quinoa or Rice or just eat a bowl full when you just want to have your veggies but are not in the mood for salad. So If you read my last post about Cream of Asparagus soup-without any cream!, you know that for the longest time after coming to this country I avoided this vegetable, because I had never cooked or eaten it! But as we started exploring different cuisines and started travelling, I started enjoying the taste.
The thing with Asparagus I feel is it has such a mild flavor that you really don’t want to drown it with a lot of spices or flavors. I have always eaten Asparagus spears, sauteed as a side dish with some salt and pepper. The Indian in me wanted a little bit more drama to the usual salt pepper stir fry and so I added the garlic, onion and colored peppers to the Asparagus. Plus the flavor of Ghee, just love it! If you have never cooked in ghee before, or have never tried it, you are absolutely missing on some great flavors and amazing health benefits.
As I was researching about Asparagus I found that Asparagus is one of the best sources of Vitamin K, which is important for bone health. It provide Folic acid which is important for avoiding birth defects and at just 30 calories for a cupful, its good for the waistline. Its high in fiber which is great for digestion and constipation too! With so many benefits, why would you not include Asparagus in your diet!
Asparagus Pepper stir Fry
Ingredients
- 1 pound Asparagus cut into 11/2 inch pieces
- 2 Cups Red Pepper roughly chopped
- 1 Red Onion sliced
- 2 garlic cloves sliced
- 1 Tbsp Ghee/ Butter I used Ghee
- Salt and Pepper to taste
Instructions

Wash Asparagus, throw away the bottom woody part and chop the rest into 1 to 11/2 inch pieces

Heat Ghee and add Garlic

Make it pinkish-light brown

Add sliced onion, Make it pink.

Add Asparagus and stir fry for few minutes

Add Peppers, salt and pepper to taste and make the flame High and stir till done.

Its gets done very quickly, we want the vegetables to be crisp and done.
Notes
Serve with Quinoa or plain rice.

Ingredients
In hot ghee, Add sliced garlic and make them light golden brown
Add sliced Onions
Cook onions till pinkish brown
Add sliced Asparagus and stir for few minutes
Add Red Peppers, salt and Pepper and stir on High, till the vegetables are crunchy, yet done
Serve with Quinoa, like I did or with Rice.
