Asian Slaw-Asian Salad

Want a quick,easy, colorful salad which can be put together in 10-15 minutes, then this is the recipe!

I love to make this as an appetizer, specially because it can be assembled in advance and the dressing also made a few days before. The dressing is so easy to put together, just mix it all together and keep in fridge. It can’t get any easier than that.

I used precut Coleslaw and Broccoli slaw and a very simple vinaigrette and threw in some nuts and voila, gorgeous, yummy salad! The addition of the Ramen noodles in the salad, provides the crunch and the seasonong packet in the dressing, gives it an Asian flavor.

Yes, the Ramen noodles are added raw to the salad! After adding the dressing, it seems like they just soak in all the flavors of the dressing and provide a great flavor to the salad.

Ingredients

  

For the Salad

  • 1 packet Coleslaw about a pound
  • 1 packet Broccoli Slaw
  • 1 bunch Green Onion chopped
  • 1/2 cup Cilantro chopped
  • 1 small Red Onion chopped
  • 1/2 cup Roasted and Salted Peanuts
  • 1/2 cup Roasted and Salted Sunflower Seeds or Almonds
  • 1 packet Ramen Noodle any flavor, I used Oriental Flavor

For the Dressing

  • 1/2 cup Oil
  • 6 tbsp Rice Wine Vinegar or any vinegar
  • 5 tbsp Sugar
  • 11/2 tsp salt
  • 1 tsp Black Pepper
  • 1 Spice packet from Ramen Noodle

Instructions

 

  • Take a sealed packet of Ramen Noodle and crush with rolling pin or any heavy object. Open and remove the spice packet for dressing.
  • Mix all ingredients for dressing in a microwave safe glass container with a lid. Microwave for 30-40 seconds on power 5 or just mix really well till sugar dissolves.
  • Mix all ingredients for salad.
  • Save some Cilantro, Green Onions, Red Onions and nuts for garnishing.
  • Pour dressing on salad 5 minutes before serving and toss well.
  • Garnish and serve.

Notes

If you don’t have coleslaw, just shred some Green Cabbage, carrots and Purple Cabbage. If you don’t have Broccoli slaw, just double the quantity of Coleslaw.
