Asparagus Pepper stir Fry

Ingredients
  

  • 1 pound Asparagus cut into 11/2 inch pieces
  • 2 Cups Red Pepper roughly chopped
  • 1 Red Onion sliced
  • 2 garlic cloves sliced
  • 1 Tbsp Ghee/ Butter I used Ghee
  • Salt and Pepper to taste

Instructions
 

  • Wash Asparagus, throw away the bottom woody part and chop the rest into 1 to 11/2 inch pieces
  • Heat Ghee and add Garlic
  • Make it pinkish-light brown
  • Add sliced onion, Make it pink.
  • Add Asparagus and stir fry for few minutes
  • Add Peppers, salt and pepper to taste and make the flame High and stir till done.
  • Its gets done very quickly, we want the vegetables to be crisp and done.

Notes

Asparagus and Peppers get cooked quickly, so please do not overcook.
Serve with Quinoa or plain rice.
