Air Fryer is the easiest way to roast/grill eggplant for recipes like Indian Baingan Bharta,Chokha and dips like Baba Ganoush. Its mess free and the dark skin gets charred perfectly leaving the inside of the eggplant/baingan cooked and meaty.
Adding the garlic is optional and some recipes may not require the use of garlic. Roasted garlic does give a very unique taste to the eggplant. Try to remove the charred skin of the eggplant/baingan as quickly as possible. The longer the skin stays on the eggplant, it bleeds its color on to the meaty part, making it dark. That in turn turns the dish dark, making it unappealing. Use a fork and knife to remove the skin.
